Rosso Coffee is a Melbourne-based specialty roaster with a growing CBD presence. We take coffee seriously, from green bean selection at our North Melbourne roastery to the last drop in the cup.
Our espresso bar is a purpose-built space — 30 seats, tight layout, and designed from the ground up for fast, high-quality service. There's no wasted space and no wasted motion. It runs well because it was built to, and we need a manager who can match that standard and keep raising it.
The role
Own the space — staffing, workflow, quality, and pace from open to close
Keep the bar running at its best during peak — a compact space means flow and positioning matter, and you'll know how to get the most out of both
Lead, coach, and develop a small team — real-time feedback on shift, weekly check-ins off it
Own openings, closings, stock, and venue presentation — without being reminded
Be the eyes and ears on the ground — feeding product, menu, and guest insights back to head office so we keep improving
Who we're looking for
An experienced specialty barista who's ready for (or already in) a management role
Someone who thrives in a fast, high-volume environment — you don't slow down under pressure, you sharpen up
Operationally sharp — you notice what's off before it becomes a problem
A natural communicator — direct, calm, and clear with your team and your guests
High personal standards — for extraction, presentation, and the experience guests walk away with
